Raw artichokes

Small, tender, and appetizing, these artichokes are anautochthon variety named “brindisino”. The cultivation startsat the beginning of October and the picking in April. The freshartichokes end their working process within eight hours ofbeing picked. This kind of artichoke is very tender. The leaves are removed by hand, the artichokes are scalded and put in extra-fine-olive-oil. No other ingredients or spices are added in order to valorize the unique taste of the product.They can be used to enrich an hors-d’oeuvre, to dress coldrice together with our Mediterranean greens, and are reallydelicious on pizza. They have a natural taste and are alsoexcellent to enrich a warm dish.
